Week 11 starts. RB/WR?

I’m 5-5 and I have to win this game to stay in contention for the playoffs. I’m pretty torn on who to start.

LT vs. DEN
Joseph Addai vs. BAL
Ladell Betts vs. DAL

Brandon Marshall for sure.

Toss-up between Smith and Austin. Watch Smith’s health. If he’s good to go, I’d play him over Austin this week because of the matchup. Plus the Skins have shown dramatic improvement recently, especially in the secondary.

Addai for sure.
Betts for sure.

Out of the other three, I’d start LT. Last week he made up for lackluster mid-season. I bet that Rivers has been told to use him more and last week he did. Expect another big game this week from LT and better than Snelling or Smith.

I need help with THANKSGIVING DRESSING RECIPE – Homemade style?

Ok there is a recipe in my family for some awesome dressing.. this is not the typical crumb dressing or stuffing… its cooked in a pan and cut into squares… I got the ingredients from the family member but since it has been made by our family no one ever wrote down the quantity of each ingredient, they always knew what to add and cooked it by taste… (Could you please help me with the POSSIBLE QUANTITY OF EACH INGREDIENT) LET ME KNOW IF YOU HAVE SEEN A RECIPE LIKE THIS…

HERE IS THE RECIPE THAT WAS SENT TO ME…

chicken stock
cornbread
biscuits
sage
finely chopped celery
boiled eggs (chopped)
finely chopped onions
salt & pepper

best to bake the corn bread and biscuits the day before
crumble the cornbread and biscuits into a large pot
add eggs, celery, & onions
salt and pepper to taste
then start adding sage a little at a time and stir well, taste the dressing after adding sage until it taste the way you want it. you’ll know when it tastes right
mix everything really well and pour into very shallow pans to bake
set the oven to 375 and bake for 20-30 minutes
check the dressing at this point to see if its still soupy in the middle, if it is continue to bake until its firm..
This will be for me and my fiancee only.. so I just want a serving size of 4, more is fine we will just have alot of left over..

I do not intend of stuffing the turkey, we always just cut into squares and serve with rest of meal..


1 c diced onion
1 c diced celery
1/3 cup butter
4 c crumbled biscuits or bread
4 c crumbled corn bread
1 c dice boiled eggs
1 1/2 teaspoons salt
1/8 teaspoon pepper
1 T sage
1 c or more chick broth

cook onions and celery in butter until soft but not brown…place biscuit and cornbread crumbs in a bowl..season with sage ,salt and pepper and toss…add onions,celery and boiled eggs and combine well..add enough broth to make it moist but not soggy…bake at 350 for 30 mins

Depends on the size of your bird.
However, this is what our family uses and let me tall ya it’s great.

Tear up about 2 loaves of white bread
1 bunch celery chopped
1 lg onion chopped
about 16 or so ounces of chicken broth

Sautee celery and onions in pan with "real" butter until lightly browned
Add broth and simmer 3 min

Slowly pour mixture over bread and add 2 -3 eggs
mix will and do not over saturate.

You can also add other ingredients as you like

Stuff turkey and put extras in a foil covered pan and roast according to turkey weight.

Well, my dear, that is how many people cook….I hate to tell you….I just cook by instinct…if you are cooking for a group….I would get an entire stalk of celery…as in the entire bunch, clean it and chop up all of it, about 5-6 medium onions, diced rather small…and cook them until soft in a small bit of oil…

(As for the corn bread, I would get 4 boxes of mix, and bake it the day before…and how many ever servings that made, I’d bake that many biscuits…I would also have on hand a couple of bags of stuffing croutons, in case I needed to add to the mixture to make it work, in case I needed to adjust to get the taste right)

Put some salt, pepper and sage in the cooked veggies….put the crumbled bread and biscuits in a large bowl or pan, add a dozen of chopped, boiled eggs and mix well…when thoroughly mixed, begin to moisten with chicken stock…it may take a quart or more…it’s hard to say…you will want to let it sit for a few minutes so that the liquid soaks into the bread mixture…add more stock…the point is that by the time you put it into the pans to bake, you will want to be able to press it will your finger and see a small amount of moisture….this will ensure that you will wind up with stuffing that is not bone-dry…

After you put the dressing in the pans to bake, dot the dressing with small pieces of butter and put into oven to bake…

I hope this helps you! Shame on them for not giving you a little more direction on this recipe…you need to WATCH someone make this and take good notes. I was fortunate that I learned so much at the knee of my great-grandma, and then in our family restaurant, watching and learning from my mom.

Most of my cooking is done without recipes, and with reckless abandon! But that being said, I’ve been cooking since I was about 5…I remember standing on a footstool and being encouraged to crack eggs, stir mixes, beat eggs, etc. THAT makes a huge difference when one is welcomed into the kitchen at such an age.

Here’s mine, one bag of Pepperidge Farm bagged dressing, One log of breakfast sausage (found in the frozen meat dept. (JAMESTOWN MILD or JONES) Sautee the sausage, add some chopped celerey 2 – 3 stalks, and onions 1 small to medium, and sage 1 tblsp. if you have add the bag of dressing with the butter and water and then stir til mixed then turn off to cool then stuff the bird. The leftover can be put into a separate dish for heating.

Firmness is the most important thing.
Don’t choose any mushy ones.
Store them outside of the fridge in a cool place.
When you cut them, if they’re very seedy, salt them.

it needs to be firm, not squishy. but it should not be hard. if you’ve chosen wrong, you can know because the inside will be greenish.

by the way, depending on what you are making, my mom thinks its better if the eggplant has a thinner circumference. its much easier to work with.

Asian type eggplants are the most sweet, too.

store in the refrigerator. you don’t really need to put it in any special container or anything.
